Active compounds:

Oregano and thyme share some key compounds including carvacrol, a key phenol, as well as thymol. Thyme also contains terpenes, flavonoids and saponins, all of which are preserved in synergy by the fermentation process. Clove is a warm, pungent spice whose most potent phytochemical is eugenol.
